11. Sausage Lasagna
Ingredients:
1 chopped onion
1 egg, lightly beaten
1 can of crushed tomatoes
1 carton of ricotta
1 1/2 cups of grated parmesan cheese
12 no-cook lasagna noodles
4 cups of shredded mozzarella
1 can of tomato sauce
1 can of tomato paste
3 teaspoons of dried basil
2 cloves of minced garlic
3/4 teaspoon of pepper
1/4 teaspoon of salt
Steps:
2. Get out a large skillet and crumble your sausage and onion into it over medium heat. Keep cooking for five to seven minutes until all the pink is cooked out.
3. Drain the extra fat and add garlic and tomato paste, cooking and stirring for another minute.
4. Add your tomatoes, tomato sauce, basil, half a teaspoon of pepper and your salt. Bring everything to a boil.
5. Next, reduce the heat and let it simmer, uncovered, for 10 to 15 minutes so it can thicken.
6. In a side bowl, mix your egg, ricotta, 1 1/4 cups of parmesan and the rest of the pepper.
7. Spread about one and a half cups of your meat sauce into a greased up baking dish.
8. Layer four of your noodles on top, topping that with a cup and a half of the ricotta mixture, a cup and a half of mozzarella and a cup and a half of sauce.
9. Repeat this process and top the whole thing off with the rest of the noodles, sauce and cheese.
10. Cover the whole thing with greased foil and bake it in the oven for 30 minutes.
11. After that, take the over off and bake for another five to 10 minutes uncovered. Let it sit for about 15 minutes and serve!
12. Shrimp and Grits
Ingredients:
1 carton of chicken broth
1 can of diced tomatoes and green chilis (drained)
1 cup of shredded Monterey Jack
1 cup of shredded cheddar
2 tablespoons of butter
1 chopped onion
1 pound of uncooked shrimp, peeled and deveined
2 minced garlic cloves
1 chopped green pepper
ground pepper
Steps:
2. Mix your shrimp and chicken broth in a 13×9-inch baking dish and bake it in the oven for 30-35 minutes, uncovered.
3. Take it out when the liquid has absorbed and the grits are tender.
4. Next, add your tomatoes, Monterey Jack and half a cup of cheddar cheese to the mixture.
5. Bake it again for 10 minutes, uncovered.
6. Sprinkle the top with pepper and the rest of the cheese and let it sit for five minutes.
7. Get out a skillet, heat your butter over medium-high and cook your green pepper and onion for six to eight minutes.
8. Once the veggies are tender, add shrimp and garlic and cook for two to three more minutes (until the shrimp turn pink).
9. When it’s all done, scoop that mixture over the grits and serve!
13. Cabbage Rolls
Ingredients:
1/3 cup of uncooked rice
8 cabbage leaves
1 pound of lean ground beef
1/4 cup of chopped onion
1 slightly beaten egg
1 can of condensed tomato soup
1/4 teaspoon ground black pepper
1 teaspoon of salt
Steps:
2. Next, get another wide saucepan out and fill it with lightly salted water. Bring that to a boil and cook your cabbage leaves in it for two to four minutes. Drain when finished.
3. Next, mix your ground beef, a cup of cooked rice, onion, egg, salt and pepper with two tablespoons of tomato soup in a mixing bowl.
4. Spread the beef mix evenly among the cabbage leaves before rolling them and tying them with string (or using a toothpick to pin them shut)/
5. Bring a skillet to medium heat and put the cabbage rolls in it.
6. Pour the rest of the tomato soup in, cover it and bring it all to a boil.
7. Cook the whole thing on low for about 40 minutes, stirring and basting throughout. Serve when they’re done!
14. Chicken Zucchini Casserole
Ingredients:
1 can of cream of chicken soup
3/4 cup of melted butter
3 cups of diced zucchini
1 shredded carrot
2 cups of cubed, cooked chicken
1/2 cup of chopped onion
1/2 cup of sour cream
Steps:
2. Add your zucchini, chicken, soup, carrot, onion and sour cream to the stuffing mix bowl.
3. Transfer the mix into a greased up baking dish and sprinkle the top of it with the stuffing mix you kept in reserve.
4. Bake the dish at 350, uncovered, for about 40 to 45 minutes.
5. When the cheese is brown and bubbly, take it out and serve!
15. Corn Pudding
Ingredients:
1 cup of whole milk
1/2 cup of sugar
1 can of creamed corn
5 slices of day-old bread (crusts removed)
1 tablespoon of softened butter
Steps:
2. Add your corn and sugar and mix everything together well.
3. After that, cut up your bread into half-inch cubes and put them all in a square baking dish.
4. Pour your egg mixture over the bread and dot the top of it with butter.
5. Bake the whole thing at 350 degrees, uncovered, for 50 to 60 minutes (until a knife comes out clean).
6. When it’s done, cut in and serve!
16. Apple Almond Bake
Ingredients:
1 cup of brown sugar
3/4 cup of sugar
1/2 cup of almond flour
2/3 cup of cold water
1 3/4 cups of quick-cook oats
1 1/4 cups of flour
5 cups of tart apples (peeled and sliced)
1/2 cup of chopped almonds (roasted and salted)
2 tablespoons of butter
1 teaspoon of baking soda
Steps:
2. Next, put a saucepan on the heat and bring the syrup to a boil and cook it for three to five minutes until it reduces by half.
3. Next, get out a mixing bowl and combine sugar and cornstarch. Whisk in water until it all turns smooth.
4. Whisk that bowl into the syrup and bring it back to a boil, cooking and stirring for another minute to two minutes.
5. Whisk in two more tablespoons of butter until it’s all blended together and take it all off the heat.
6. In another big bowl, mix together your oats, flour, brown sugar, almond flour and baking soda.
7. Cut in cold butter until it all turns crumbly and keep 1 1/3 cups of it in reserve.
8. Press the rest of the mixture into the bottom of a greased up baking dish.
9. Spread the apples on top and drizzle it with syrup as well.
10. Stir your almonds into the rest of the crumb mix and sprinkle that on top as well.
11. Bake the whole thing for 50 to 60 minutes until the apples are tender and golden brown.
17. Toad in a Hole
Ingredients:
1 package of breakfast sausage links
1 cup of milk
1 cup of flour
3 tablespoons of olive oil
1/2 teaspoon of salt
butter
maple syrup
Steps:
2. In a small bowl, mix together your eggs, milk and salt.
3. Whisk your flour into the egg mix until it blends and let it sit for 30 minutes.
4. In the meantime, cook your sausage according to the package instructions. When it’s done, cut each one into three pieces.
5. Next, put some oil in an ovenproof skillet and put it in the oven for three to four minutes until it gets hot.
6. After that, stir in your batter and pour it into the skillet, topping it with sausage.
7. Bake the dish for 20 to 25 minutes until it turns golden brown and fluffs up.
8. When it’s done, take it out of the skillet and cut it into slices. Serve with butter and syrup and enjoy!
18. Hamburger Pie
Ingredients:
1/2 cup of chopped onion
2 1/2 cups of thawed green beans
1 can of condensed tomato soup
1/2 cup of shredded American cheese
1/4 teaspoon of salt
mashed potatoes
pepper
Steps:
2. In a big skillet, cook your meat and onion until the meat turns brown and the onion goes tender. Drain the fat and add salt and pepper.
3. Next, stir in your thawed beans and soup and pour it all into a rectangular baking dish.
4. After that, scoop the mashed potatoes on top of the bean mixture in mounds.
5. Sprinkle cheese on top of all that and bake it at 350 degrees for 30 to 35 minutes, uncovered.
6. Let it cool for a few minutes when it’s done and serve!
19. Butternut Squash Bake
Ingredients:
8 ounces of dried, extra-wide noodles
3/4 cup of grated parmesan
1/2 cup of Italian parsley
1 cup of panko breadcrumbs
4 tablespoons of butter
6 chopped shallots
2 tablespoons of olive oil
1 tablespoon of lemon juice
1 carton of mascarpone cheese
Steps:
2. In a bowl, toss your squash chunks in oil and put them in a baking dish.
3. Roast them uncovered for 30 minutes until they turn brown and tender (stir twice throughout).
4. Next, get out a Dutch oven and cook your noodles according to the package directions and drain them, setting them aside.
5. In the same Dutch oven, melt two tablespoons of butter and add your shallots, cooking them over medium heat for three to five minutes.
6. Stir in the lemon juice before adding your noodles and squash.
7. Mix in the mascarpone, half a cup of parmesan, a quarter cup of parsley and a quarter teaspoon of salt and black pepper.
8. Transfer everything over to a greased up baking dish.
9. In a small saucepan, melt the last two tablespoons of butter and stir in your bread crumbs, leftover parmesan and parsley.
10. Sprinkle all of that on the noodles and bake the whole thing for 10 minutes, uncovered.
11. When the crumbs turn golden brown, let it cool briefly and serve!
20. Tuna Noodle Casserole
Ingredients:
1 can of water-packed tuna
1/4 cup of dry breadcrumbs
1 package of frozen green beans
1 cup of sliced fresh mushrooms
1/2 cup of chopped onion
3/4 cup of chopped red or green peppers
1/2 cup of sliced celery
1/2 cup of water
1 1/2 cups of fat-free milk
1/2 cup of shredded American cheese
1/2 teaspoon of dry mustard
1 tablespoon of cornstarch
1 clove of minced garlic
1 teaspoon of instant chicken bouillion
1 tablespoon of melted butter
Steps:
2. In the meantime, drain your tuna and break it up into flakes.
3. Toss your breadcrumbs with butter as well and set it aside.
4. In a big saucepan, mix together your frozen green beans, mushrooms, peppers, onion, celery, water, bouillon and garlic.
5. Bring the whole thing up to a boil and turn the heat down, covering the dish and simmering it for about five minutes.
6. In the meantime, stir together your milk, cornstarch and dry mustard and stir it into the vegetable mix.
7. Cook and stir everything until it turns thick and bubbly.
8. Take it off the heat and stir the cheese in until it melts. Stir in the noodles and tuna as well.
9. Spoon the mixture into the casserole dish and sprinkle the breadcrumb mix around the outside edge of it.
10. Bake everything uncovered at 350 degrees for 25 to 30 minutes.
11. When it’s done, let it cool and serve!
