This Angel Food Cake With Berries Is A Great Summer Dessert
With berries and a creamy filling, this is sure to be a new family favorite.

Summertime cookouts are one of the best things about the season. Whenever we have an excuse to get the whole family together and eat some delicious food, we typically jump at it. Still, after the initial courses of hot dogs and burgers, trying to muscle down a dessert dish at the end can be a little bit challenging. For these situations, it’s good to pick a dessert ahead of time that everyone at the party will be able to handle.

Fortunately, we have a good dessert for just that purpose. Instead of a heavier dish, why not try to make this three-berry angel food cake roll? Though it’s sure to satisfy your sweet tooth, it might not make you need to take a nap halfway through the day. The fresh fruit combines perfectly with the fresh sweetness of the berries—and the creamy filling brings it all together. So let’s get started.

Here’s what you’ll need:

  • 1 box of angel food cake mix (plus ingredients to make it)
  • 1 cup of powdered sugar
  • 8 ounces of light cream cheese
  • 1 1/2 cups of heavy cream
  • 1 teaspoon of vanilla
  • 1 1/2 cups of diced strawberries
  • 1 1/2 cups of blueberries
  • 1 1/2 cups of raspberries

Here’s what you do:

1. Before you get started, be sure to preheat your oven to 350 degrees. Get out a rimmed baking pan and line it with parchment paper as well without greasing the pan. Once you’ve done that, you can start making the angel food mix according to the instructions on the box.

2. Once the batter is ready, pour it into your pan and let it bake in the oven for approximately 20 minutes. Check on it after that time to be sure that the edges have begun to crack and the top has turned golden brown. When it’s done, carefully loosen the cake from the pan while it’s still warm.

3. Next, take out a clean kitchen towel or place mat and sprinkle it with 1/4 cup of your powdered sugar. Flip your angel food cake out onto the towel and peel the parchment paper off of it. Before it gets a chance to cool, roll the rowel around the cake starting at the short cake (with the towel still wrapped inside it). Let it cool completely and pop it in the fridge if necessary.

4. After that, get out a large bowl and beat your cream cheese with an electric mixer so that it turns smooth. Add the other 3/4 cup of powdered sugar along with vanilla and heavy cream, beating it all on low so that it combines. After that, turn the speed up to high and beat it for three to four minutes until it forms stiff peaks and gets fluffy.

5. Finally, take your cooled cake out and unroll it, spreading about half of your cream filling and berries on it. Carefully roll it back up without the towel and put it on a serving plate. Finally, spread the rest of the cream on the top and the sides and add your leftover berries. Serve it immediately!

As you can see, the ingredients of this recipe are relatively simple and the cake is still delicious without being too filling. Although putting this dessert together requires a little bit of speed and finesse, it’s not too difficult and is sure to satisfy the entire family.
