If you’re anything like us, you love a good street meat taco. For just a few dollars, you can walk down the street and get a set of piping hot tacos complete with lime juice, fresh onions and chopped cilantro. Add some hot sauce and it begins to resemble a nearly perfect meal. If you’ve tried to make your own tacos at home, you’ve probably noticed that the meat mixture you usually make doesn’t quite add up to the stuff they sell on the street. As always, the marinade recipe is what makes the meat taste particularly delicious—and we’ve cracked the code for you today.

That’s right, we’re going to show you how to make an authentic carne asada recipe that should take your home tacos to the next level. Although this dish packs plenty of flavor, the preparation process couldn’t be much easier. All you have to do is buy a relatively cheap cut of meat, throw it in a bag with some juices and spices and let it sit. At the end, your taste buds will thank you. So let’s get started.

Here’s what you’ll need:

  • 2 juiced limes
  • 4 cloves of crushed garlic
  • 1/2 cup of orange juice
  • 1 cup of chopped cilantro
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of olive oil
  • 1 minced jalapeño
  • 2 tablespoons of white vinegar
  • 1 flank steak (two pounds)
  • gallon-sized Ziploc bags

Here’s what you do:

1. To get started, get out one of your giant Ziploc bags and pour in your lime juice, garlic, orange juice, cilantro, salt, pepper, olive oil, jalapeño and vinegar. With everything in there, zip the bag up and squeeze and shake it lightly with your hands to get mixed up.

2. Once the marinade is done, throw your flank steak in the bag whole and seal the Ziploc up again. Make sure that the meat is completely submerged in the liquid before setting it in the fridge. Let it sit in the fridge for at least two hours, though overnight is ideal.

3. When you’re ready to cook, start up and outdoor grill and set it to high heat. Once it’s hot enough, take your flank steak out of the marinade bag and pour out the excess. When you’re ready, slap the meat on the grill.

4. Cook your meat for about seven to 10 minutes per side before taking it off the heat and letting it rest for another 10 minutes. When it’s finally done, get out a sharp knife and slice up your flank steak against the grain. After that, throw it in some taco shells with your toppings of choice!
