  • salt
  • pepper
  • freshly chopped parsley

Step one:

Chop the parsley and onions into small pieces, and dice the potatoes.

Step two:

In a large mixing bowl, whisk together the eggs with parsley, salt, and pepper.

Set aside, once the right mixture has been achieved.

Step three:

Put some oil in a pan, pour in the diced potatoes and chopped onions.

Fry until the potatoes are crispy and golden brown in color.

Step four:

In the egg mixture, add the fried potatoes and onions.

Mix until the potatoes and onions are evenly distributed throughout the egg mixture.

Step five:

Heat some oil in a pan and pour in 1/3 of the egg and potato mixture.

Cook until it sets then place the cheese in the middle of the pan.

Step six:

Pour in the remaining mixture, make sure the wheel of cheese stays in the center.

Cook over medium heat until it’s completely solid.

Step seven:

After that, flip the omelet over and cook the other side until golden brown.

Tip: When flipping, it’s best to use a plate.

Step eight:

Finally, take the dish out of the pan and place it on a plate to serve.
