- 1.5 kg or 3 1/3 lbs Watermelon rind
- Water for resting
- 30g baking soda (2 tablespoons)
- 800g sugar (4 cups)
- 1L water (5 cups)
- 5 cloves
- Half lemon
To make:
It’s a long but simple process here.
Step 1: Peel the skins from the watermelon rinds.
Step 2: Cut into cubes and place in a large bowl.
Step 3: Pour water over the cubed rinds.
Step 4: Add the baking soda.

Step 5: Rest overnight or at least 6 hours

Step 10: In the large pot, add sugar and water
Step 11: Add cloves and stir.

Step 13: Cook for 30 minutes. Stir, then cook for another 1 1/2 hours.
Step 14: Squeeze lemon into the mix.
Step 15: Stir again and transfer to your mason jar.
Voila! You’re done.
This pickled watermelon rind can last up to 2 years. Just put them in a closed jar and store them in your fridge.
