Here’s what you’ll need:

  • 1.5 kg or 3 1/3 lbs Watermelon rind
  • Water for resting
  • 30g baking soda (2 tablespoons)
  • 800g sugar (4 cups)
  • 1L water (5 cups)
  • 5 cloves
  • Half lemon

To make:

It’s a long but simple process here.

Step 1: Peel the skins from the watermelon rinds.

Step 2: Cut into cubes and place in a large bowl.

Step 3: Pour water over the cubed rinds.

Step 4: Add the baking soda.

Step 8: Drop watermelon rinds in and again, bring to boil.

Step 9: Drain the water and set aside.

Step 13: Cook for 30 minutes. Stir, then cook for another 1 1/2 hours.

Step 14: Squeeze lemon into the mix.

Step 15: Stir again and transfer to your mason jar.
