Step one: Take out your vegetable peeler. Peel off all the outer layer of skin of the potatoes.

Step two: Slice the peeled potatoes in half, lengthwise, and scoop out the center of each potato, leaving about an inch of flesh in each.

Step three: Fry the potato boats one by one until golden brown and crispy, about 4 to 6 minutes. This is to make sure that your potato boats will be in good condition once taken out of the cooking oil.

Drain and transfer the potatoes to a baking pan tray set over a baking sheet. Set aside.

Step four: Time to take out your electric meat mincer to grind that chicken fillet.

If you don’t have this machine you can always buy a fresh minced chicken fillet at your nearest market. Make sure that the minced chicken will be placed in a large mixing bowl.

Step six: Top each potato boat with a thin layer of shredded cheese.

Next, dump in the filling mixture and stuffed it well inside the potato boats. After stuffing is done, top it once more with a layer of shredded cheese. Finish the toppings by squeezing in some ketchup.
