Coconut Macaroons Are Light, Fluffy And Easy To Make

For those who don’t know, a macaroon is a small biscuit or cookie typically made out of ground-up nuts and egg whites rather than a typical dough (not to be confused with macarons, another kind of fancy cookie). Still, macaroons can also be made out of coconut shreddings—which is exactly what we’ll be doing today.

If you’re a baker who likes to experiment with different desserts, this simple coconut macaron recipe is a delicious option that can offer your household some additional variety. The steps are incredibly easy to follow and the result is a unique treat that the whole family is sure to love. So what are we waiting for? Let’s get started.

Here’s what you’ll need:

  • 1 14-ounce bag of sweetened shredded coconut
  • 1 14-ounce can of sweetened condensed milk
  • 1 teaspoon of vanilla extract
  • 2 large egg whites at room temperature
  • 1/4 teaspoon of salt

Here’s what you do:

1. Before you get started, preheat your oven to 325 degrees. After that, line two baking sheets with parchment paper as well. When that’s done, get out a medium bowl and mix together your coconut, condensed milk and vanilla.

2. In another bowl on the side, beat together your egg whites and salt with an electric mixer set on high. Keep doing this until it forms stiff peaks and then fold that into your coconut mixture as well.

3. With that, your dough is done! Finally, get a tablespoon and scoop out one or two tablespoons of the mixture and drop it onto a baking sheet about one inch apart from one another. When the oven is preheated, put the sheet in and let it cook for about 25 to 30 minutes.

4. Finally, check the cookies out when the time is up to make sure they’re golden brown and cooked all the way through. If everything looks good, pull them out and let them cool off on a wire rack. Dig in once they’re cool enough to eat and enjoy!

Although these cookies are great as they are, you can take the flavor up a notch if you want by dipping the bottoms of these cookies in chocolate as well. On the other hand, you could also make another version of these cookies by using ground nuts instead of coconut shreddings if you’re strongly against the flavor.
