This Cowboy Cook is at it Again, Showing Us How to Make “Pigs in a Cornfield”

Up for some outdoor cooking? Well, you can try this great recipe from Cowboy Kent Rollins, who does a wonderful job at cooking one-pot meals. If outdoor cooking is not your thing, don’t worry, this recipe is really easy and won’t demand a lot of ingredients, and you can also cook it in your preferred oven if that’s what you want.

But you don’t want to miss having a great experience by cooking this outside the home for the first time with an old-fashioned Dutch oven.

Try cooking pigs in the cornfield, the cowboy style!

Cowboy Kent Rollins’ cooking career started while spending time with his uncle and helped feed the hunters in the Gila Wilderness of New Mexico. He then began cooking for ranches and started a catering business. Due to his growing popularity and passion for preserving the old way of life, Kent was proclaimed the Official Chuck Wagon of Oklahoma in 1996 by the governor of Oklahoma.

With this recipe that he’s going to share with us, you’ll be amazed at his style of cooking.

You can cook this recipe using a Dutch oven or by using a skillet. Regardless of what you prefer, you always begin with good ground sausage.

Get the Jimmy Dean Premium Pork Sausage if you can.

Ingredients needed:

1 pound breakfast pork sausage, ground

½ pound chorizo

½ white onion, chopped

1 jalapeno, chopped

1 red bell pepper, chopped

1 large egg

2 large Ritz crackers, crushed

1 14.75-ounce can cream corn

1 cup cheddar cheese

½ stick butter, sliced

1 cup chopped green onions for garnish

Follow these easy cooking instructions to get started.

Step One:

Preheat your oven to 350 degrees F.

Step Two:

Get the large cast-iron skillet, put the sausage, pinch some bite-sized pieces to put inside. Get the pieces of chorizo and slice them with the casing. Cook this on medium heat with occasional stirring, for about 10 minutes and until it’s browned.

Step Three:

Then toss in the jalapeno, bell pepper, and onion, and let it cook for an additional five minutes.

Step Four:

Grab a small bowl. Whisk together the egg and cream corn. And then add 1 sleeve of crushed Ritz crackers. Spread this mixture on the sausage mixture.

Step Five:

Place the slices of butter on top. You need it for extra moisture. Bake for about 25 minutes.

Step Six:

Then remove it from the oven and increase the oven temperature to 400 degrees F.

Step Seven:

Add in the remaining sleeve of Ritz crackers and let this cook until it becomes crisp. Bake this for an additional 10 minutes. Then sprinkle the cheddar cheese on top evenly and bake for 5 more minutes or wait for the cheese to melt.

Step Eight:

You can then remove what’s cooking in the oven and garnish it with the chopped green onions.

Make sure to serve the dish hot for a more delightful experience!
