Do you have fond memories of eating Creamsicles in the summer during your childhood? If you do, you’re not alone. People everywhere love those fruity, creamy popsicles since they first came out on the market.

But now, Creamsicles have gotten even better.

Yup, believe it or not, someone managed to make those yummy popsicles thousands of times more delicious than they already were. And they did that by turning them into a cheesecake.

Let’s be clear: this cheesecake isn’t made from those amazing popsicles. But it is made from ingredients that perfectly combine the flavors to make what everyone claims tastes exactly like the perfect summer popsicle.

If you think this might be the best dessert you’ve ever tasted, you’re probably right.

With oranges, sour cream, vanilla cookie crumbles (actually Golden Oreos, to be more specific), whipped cream, and orange Jell-O, this is a decadent dessert that’s the perfect homage to the classic popsicle.

Here’s What You Need:

FOR THE CRUST

– 24 whole Golden Oreo cookies, crushed
– 6 tbsp. melted butter
– Pinch of kosher salt

FOR THE FILLING

– 1 (3-oz.) box orange Jell-O
– 1 c. boiling water
– 2 c. whipped topping
– 2 (8-oz.) blocks cream cheese, softened
– 1/4 c. sour cream
– 1 c. powdered sugar
– 1 tsp. pure vanilla extract
– Pinch of kosher salt

GARNISH (Optional)

– 1 c. whipped topping
– 1 clementine, peeled and separated into segments

Step 1:

In a large bowl whisk together orange Jell-O and boiling water until the Jell-O is completely dissolved. Once mixed, set it aside to cool completely.

Step 2:

Make the crust. In a medium-sized bowl mix together the Oreo crumbs, salt and butter. Once it becomes chunky press it into the bottom of an 8″ springform pan and up along the sides.

If you’ve never made cheesecake before, don’t worry — it’s not as hard as you think.

You just might need to work with some new textures that you’re not used to while baking.

“The batter might feel kind of loose as you’re adding it to the pan—don’t worry!” says Lena Abraham of Delish. “After a couple hours in the refrigerator, the cheesecake mixture will be perfectly firm and creamy.”

Step 3:

Make the filling. Grab another large bowl and beat the cream cheese and sour cream inside of it until the mixture becomes smooth. Once smooth add powdered sugar, vanilla, and salt. Gently fold the whipped topping into the cream cheese mixture and then pour half of the mixture into cooled Jell-O. From there whisk it until the mixture is smooth.

Step 4:

Go back to your crust and alternate pouring 1/4 cup dollops of cream cheese and Jell-O mixtures until you’ve used them both up completely. Grab a butter knife and gently swirl the top layers together to give it the marbled look. Cover it and then plop it into the fridge for 6 hours or until it has firmed up.

Step 5:

Once firm, plop dollops of whipped topping on top and decorate with clementine pieces. If you’d like to garnish more, add orange zest on top for an extra burst of orange flavor. Enjoy!

“I still remember the first time I made these truffles, way back before we bought our first house,” writes Chrisy of Homemade Hooplah. “I was making them for a party, and had already bragged to everyone I would be doing it… so, of course, when it was time to get to cooking, I wanted nothing more than to back out of it. I was buckling under the pressure. Sure, this could end badly. But it could also end up outstandingly awesome. And despite all my trepidation, these truffles were easy.”
