If you were ever planning to get a job as a chef at a restaurant, one of the first things you better be prepared to do is to make perfect eggs. Beyond their uses in baking and other recipes, they’re also delicious to eat all on their own. Whether you like them scrambled or over easy, eggs are a cheap and delicious source of morning protein.

Cloud Eggs 🌥️🍳⠀ INGREDIENTS: ⠀ 4 large eggs⠀ Salt⠀ 2 tablespoons thinly sliced chives⠀ 4 slices bacon, cooked until crisp⠀ Sliced bread, toasted and buttered⠀ ⠀ STEPS:⠀ Preheat oven to 425 degrees. Line a rimmed sheet tray with parchment paper.⠀ Separate egg yolks from whites. Add whites to a large bowl and yolks to individual ramekins.⠀ Season whites with a pinch of salt then whip with an electric mixer until stiff peaks appear. Plop 4 small piles of egg whites onto the prepared parchment paper. Use a spoon to make a small nest for each yolk. Bake for 3 minutes, until edges are slightly golden. Remove from oven and plop a yolk into each nest. Season each with a pinch of salt.⠀ Return to oven and bake about 3 minutes, until the edges of the yolks just start to set but the center is still runny. Sprinkle with chives. Many new food trends start on Instagram—and the newest craze surrounding “cloud eggs” is no different.

Although the recipe may actually date all the way back to the 1950s, it has recently surged in popularity and is relatively easy to make. Many prominent sites have posted their own takes on the recipe, but we’re going to give you the basic breakdown so you can try it for yourself. If you were looking for a new breakfast recipe to add some variety to your life, look no further than this one.

Here’s what you’ll need:

  • 2 eggs, separated
  • 2 tablespoons of grated Parmesan
  • 1 teaspoon of chopped chives

Here’s what you do:

1. First, begin by preheating your oven to 400 degrees. When that’s done, line a baking sheet with some parchment paper and set it aside.

2. After separating your eggs out, beat the egg whites along with salt and pepper in a bowl with an electric mixer. Keep beating it until stiff peaks start to form before folding in your Parmesan cheese as well.

3. Next, take your resulting egg whites and form two molds of them onto your baking sheet. Make a little indent in the center of each little mound using a wooden spoon.

4. At this stage, you can pop your egg whites in the oven to bake until they turn slightly brown—this should take about two to three minutes. After that, take your eggs out of the oven and carefully put your yolk back in the center of each one. Put it back in the oven and cook until the yolks set, or for about three more minutes.

5. When the time’s up, your cloud eggs should be finished! Slide them off the baking sheet with a spatula and serve them on plates alongside any other of your favorite breakfast items. Add chives!

As you can see, the process of making these eggs couldn’t be easier. Although it may seem a little unusual, cloud eggs are deliciously light with a little bit of crunch and should add some variety to your breakfast.
