Mom encases meatballs in mashed potatoes for hearty dinner
There is so much yum going on in this recipe that I don't know what to do with myself. Potato-battered meatballs? With their own dipping sauce? These won't last long in my house.

Here are the ingredients you’ll need:

For the meatballs

  • ~1 lb. minced meat
  • 2 onions
  • 3 tbsp. breadcrumbs
  • 1 egg
  • 1 ½ tsp. salt
  • 1 tsp. Thyme
  • ½ tsp. black pepper
  • 2 tbsp. paprika
  • 4 tbsp. sunflower oil

FOR MASHED POTATO

  • 2.2 lbs. of potatoes
  • 3 ½ tbsp. butter
  • 2 tsp. Salt
  • ½ tsp. black pepper
  • ½ cup cheddar cheese

FOR COATING

  • 1 cup flour
  • 1 cup breadcrumbs
  • 3 eggs
  • ½ tsp. salt

CORNED YOGURT

  • 1 cup yogurt
  • 1 tbsp. mustard
  • Can of cooked corn kernels
  • ½ tsp. salt
  • 1 tsp. garlic powder
  • 3 sprigs of dill

First, place the potatoes in a pot of water.

Then, make the meatballs while waiting for them to boil.

Shred two white onions in a bowl of minced meat. You can also chop the onions if you find that easier. Add the remaining ingredients and mix them well. You can add four sprigs of chopped parsley.

Apply oil on your hands and start shaping the meatballs.

Instead of rounding them to a ball, make an elliptical one, almost like the size and shape when you hold them with a closed fist.

Then, fry the meat until both sides are cooked and brown. Set them aside.

By now, your potatoes are cooked and are ready to mash.

Peel and place the boiled potatoes in a bowl, add the butter, and mash them together. Add salt, pepper, and cheddar cheese, and mash until they’re well mixed.

Shape the potatoes.

Re-oil your hands and press scoops of mashed potato into your palm.

Place the cooked meatball in between and start wrapping it with the mashed potato. Make sure that it is completely covered. Do this for all the meatballs.

Prepare 3 bowls to coat your potato meatballs.

Place flour in one, beaten eggs and salt in another, and breadcrumbs in the last bowl. Coat the potato meatballs in that order.

Again, do this for all the potato meatballs.

Place oil in a deep pan, and deep fry them in high heat.

Fry all the potato meatballs until they’re golden brown.

This dish alone is already ready to be served. But if you want to add a nice kick of tangy side dish, you can make this corned yogurt as a side dish.

Pour a cup of plain yogurt into a bowl.

Add the mustard, garlic powder, and salt. Then, add a small can of cooked corn kernels (around half a cup or so) and some chopped dill.

Mix everything well and serve in a small bowl. Top with chili pepper, parsley, young sweet corn, and cherry tomato.

Serve with the meatballs along with some ketchup, and you have yourself a hearty meal.
