Meringue On Chocolate Chip Cookies Is The Perfect Dessert
The added layer on top of these cookies adds its own delicious, sweet crunch.

If you’re looking to make an easy, homemade baked good that the whole family will love, it’s hard to beat chocolate chip cookies. Just one bite into one of these delicious treats (with a glass of milk on the side) can easily take us back to childhood. Although we all have our own variations on this classic recipe, the result is basically the same for the most part. You can make them as individual cookies or as one big sheet, the taste is basically the same. If you want something a little different, though, we have just the thing.

Today, we’re going to show you how to make some chocolate chip cookie bars with one delicious twist. Unlike the standard version of these cookies, this one adds a tasty and slightly crispy layer of chocolate meringue on top that takes everything to another level. Just like any other cookie recipe, everything is easy to put together and yields a lot of cookies for your family or for any party you might have coming up. Sound good? Let’s get started.

Here’s what you’ll need:

Cookies:

  • 1 stick of unsalted butter
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 2 egg yolks
  • 1 tablespoon of water
  • 1 teaspoon of vanilla
  • 2 cups of flour
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 12-ounce package of chocolate chips (half semi-sweet and half milk)

Meringue:

  • 2 egg whites
  • 1 cup of brown sugar (dark or light)

Here’s what you do:

1. Before anything else, preheat your oven to 350 degrees. In the mean time, get out a 9×13-inch jelly roll pan as well and spray it down with non-stick spray. After that, get out a bowl attached to a stand mixer and combine your butter, sugar and brown sugar, mixing it together until it turns light and creamy. Add your egg yolks (saving the whites), water and vanilla, beating it all together.

2. Get out another bowl and add your flour, salt, baking soda and baking powder as well. Gradually add that into your butter mixture and keep mixing everything together until it’s just incorporated. When the dough is ready, push it down into the dish you prepared earlier. Next, sprinkle the dough with your chocolate chips as well, pushing the chips in it.

3. With that ready, you can make your meringue as well. First, get a clean mixing bowl and add your egg whites, beating them on high until they turn stiff. At that stage, add your brown sugar and beat the mixture again, still set on high until the whole mixture is stiff once again.

4. After that, spread the mixture on top of your cookie dough and pop the whole thing in the oven for 25 to 30 minutes. Take it out when the time is up and make sure the top has turned slightly dark and the meringue layer is set.

5. Take the tray out of the oven and let it sit on a cooling rack until it cools completely. When it’s ready, cut into it and serve!

While the above recipe is mostly the same as the cookies you’re used to, the added meringue layer adds some additional texture and flavor.
