If you don’t use pork chops in your cooking too often, they may seem a little more intimidating than certain other cuts of meat. Although they can be tasty when they’re done correctly, overcooked pork chops get tough and chewy and can really put a damper on an otherwise tasty meal. Fortunately, slow cookers are here to save the day.

Still, this recipe is more than just perfectly cooked pork—it’s also a twist on the very delicious French onion soup that your entire family is sure to love. It also couldn’t be easier to make!

Here’s what you need:

  • 2 onions, finely chopped
  • 5 potatoes, chopped
  • 2 pounds of pork chops (bone-in)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup hot water
  • 1/4 cup brown sugar
  • 1/4 cup white wine
  • 2 tbsp soy sauce
  • 1 tbsp ketchup
  • 2 sprigs of fresh thyme
  • 1 cup of mozzarella cheese

Once you’ve got everything ready, here are the steps:

1. First, slice your onions up thinly and spread them out in a wide layer in the bottom of your slow cooker. After that, chop up your potatoes and throw them on top as well along with your pork chops. Sprinkle the whole thing with salt and pepper.

2. In a side bowl, mix together hot water, brown sugar, soy sauce, white wine and ketchup. Once the sauce is ready to go, pour your sauce over all the other ingredients in your slow cooker. Next, tuck your thyme sprigs into the mix to finish it off.

3. After it’s all assembled, cover it all up and cook it on low for six to eight hours.

4. Once it has cooked for six to eight hours is all done, open it up and take the sprigs of thyme out. Throw your mozzarella cheese on top of the roast and cover the roast again, cooking it for about 20 to 30 minutes (or until the cheese melts). Once the cheese is melted, take it out and you’re ready to eat!

Although this recipe is relatively straightforward, keep in mind that not all slow cookers are the same and that some may need additional time depending on your specific model. As an added tip, some of you out there may want to try searing the pork chops before throwing them into the crockpot for a little added texture and flavor.
