Potato cheese balls are easier to make than you think. Here’s how

With the holidays being around the corner, all of us are looking for delicious recipes to make this Christmas, even though our friends and family will not be tasting them due to the social distancing that we are obliged to practice. Thanks, Covid-19, we’ll be eating the whole turkey alone this year!

Besides the go-to dishes that each family makes every year, there are appetizers and bites that accompany our drinks and those are usually different every year. We often experiment with them for a change.

This year, you can make the cheeseballs that an Italian cook shows on YouTube and have everyone ask for more!

Valentina, the woman behind the How Tasty channel, uploaded a video a few months ago, showing us how to make the most delicious potato and cheese balls, which, to be honest, require basic ingredients and cooking skills.

In the video, Valentina first prepares all the ingredients that she will be using for the recipe.

She cuts the potatoes and mozzarella cheese. Then she goes on to cook the potatoes and puree them, adding cheese and seasonings.

The next step is to make balls out of the potato mixture and put a mozzarella cube in the middle. She coats them in bread crumbs and fries them.

The result is just incredible! The potato balls are so soft and, once you cut them in half, you can see the gooey mozzarella showing from inside. Wow, is your mouth watering already or what?

But, enough with the useless stuff, let’s just see the ingredients you’ll need and how you can make the delicious appetizer.

Ingredients:

  • 3 red potatoes (450 gr or 1 pound)
  • 100 gr or 3,5 oz mozzarella cheese
  • 50 gr or 1/2 cup Parmigiano Reggiano or parmesan cheese
  • salt, black pepper to taste
  • 3 eggs
  • 200 gr or 2 cups bread crumbs
  • 6 gr or 1 tablespoon paprika
  • flour
  • frying oil

Instructions:

First, peel your potatoes. If you can’t find red ones, you can use yellow potatoes instead.

Cut them in large chunks and put them in water until you’re done with all of them. Cook in boiling water until fork-tender.

In the meantime, cut the mozzarella into small cubes and place between two kitchen paper towels to dry. You can replace the mozzarella with any cheese you like, such as cheddar.

Smash the potatoes in a potato ricer and add the grated parmesan cheese, along with salt and pepper to taste.

Combine the ingredients until you get a smooth mixture.

Scoop portions of the mixture (1 tablespoon each) and make balls out of them. Press with your finger to make a hole in the middle of each ball. Put one cheese cube in there and work it in your hands again until you get a nice little stuffed potato ball.

Whisk the eggs and set them aside. As an alternative, you can use a mixture of sparkling water and flour.

Season the bread crumbs with salt, pepper, and paprika.

And then it’s assembly time!

Coat each ball in flour, then dip it into the egg mixture and, finally, coat in the spicy bread crumbs. Fry until golden brown.

Your potato cheese balls are ready to devour!
