There’s no better way to start out a weekend morning than with a piping hot breakfast. And if your family’s really lucky, they’ll wake up to the delicious smell of pancakes coming from the kitchen. Mmm.

While you’ve likely made pancakes a thousand times before and tried out various recipes – the one below might become your new favorite. That’s because they turn out extra-fluffy! According to Tasty, they’re the “fluffiest pancakes you’ll ever eat.”

Below are steps for making these mouth-watering pancakes that’ll have your family running to the breakfast table.

Let’s begin with the flour.

Flour is one of the main ingredients in pancakes, and how much you use is essential to their fluffiness. If you don’t use enough flour – they can turn out yummy, but flat. On the other hand, too much flour can result in pancakes that are thick and lacking flavor.

Tasty discovered that for the ultimate fluffy pancakes – use 2 and 1/2 cups of flour.

Here’s an extra tip: Spoon the flour into your measuring cup and then use a straight edge to level it.

The next thing you need for cloud-like pancakes is a leavener.

A leavening ingredient helps with rising – such as yeast, baking soda, or baking powder. After doing some testing, they determined that a combination of baking soda AND baking powder led to the best pancakes.

Mix up the following dry ingredients in a bowl.

  • 2 and 1/2 cups of all-purpose flour
  • 3 tbsp. of sugar
  • 2 tsp. of kosher salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder

Now set this bowl aside.

Break out the buttermilk.

Buttermilk is a terrific addition to a pancake recipe, and what you’ll need for this one too. But if you don’t have buttermilk in the fridge, you can make your own replacement.

Add 2-3 tablespoons of vinegar or lemon juice to whole milk. Then, let the milk stand for 5-10 minutes. Once you can see it’s starting to curdle – you’re good to go!

Whisk together the following wet ingredients in a bowl.

  • 2 and 1/2 cups of buttermilk
  • 1 stick of melted butter (unsalted)
  • 2 egg yolks (put the whites aside)

You’ll now be combining all of the ingredients together, but this is important…

Pour the wet mixture in with the dry ingredients, then GENTLY mix with a rubber spatula until just combined. In the video below, the Tasty host explains:

“I really want to emphasize to not overmix your batter. That will result in dense, flat pancakes. You also want to use a rubber spatula instead of a whisk. That’ll help you just gently fold the ingredients together.”

Add your two egg whites.

Mix the egg whites in until they’re just combined with the batter (still avoid overmixing). You should see some lumps in your pancake batter, which is exactly what you’re going for.

Now, let the batter sit for 10-15 minutes.

Time to pick a pan.

The type of pan you use can affect the look of your pancakes. A non-stick pan works just great, but a cast-iron skillet is recommended for these dreamy pancakes to make “craggy pockets.”

Let’s get cooking!

Turn your stove’s heat to medium and add 1 tbsp. of butter to your pan. After the butter is melted, turn the heat to medium-low for more even cooking.

Scoop 1/3 cup of batter into the pan for an “ideal-size” pancake (although you can make it whatever size you like). Now’s the time to add in toppings if desired, like fruit or chocolate chips.

Look for the bubbles.

After several minutes you’ll start to see bubbles form on the surface. They’ll be your sign to give your pancake a flip!

Once flipped, the other side only needs to cook for about 1-2 minutes.
