This Shrimp Avocado Salsa Is Light And Refreshing

When it comes to seafood, few ingredients are as versatile as shrimp is. Even for people who don’t typically like that fishy taste that comes with most seafood, shrimp has a mild flavor that goes well with all kinds of different recipes. Though it’s great grilled with a side of melted butter, you can also have it on barbecue kebobs or even in a salad. Still, the recipe we’re going to make today is a little bit different. Although you could have it all on it’s own, it also works perfectly as a side for any parties you might have coming up.

Today, we’re going to make an avocado shrimp salsa that you can serve alongside a bowl of chips. Although it’s similar to a ceviche recipe, the shrimp in this one is cooked beforehand. If you’ve never tried it before, this dish is a tour of many different bright flavors including tomato, cilantro and a splash of cilantro. Once you’ve had it once, you’re sure to want it again and again. So let’s get started.

Here’s what you’ll need:

  • 1 pound of raw shrimp, peeled and deveined
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 3 medium limes, juiced
  • 2 avocados
  • 1/2 of a cucumber
  • 3-4 roma tomatoes
  • 1 small diced onion
  • 1/2 cup of cilantro

Here’s what you do:

1. To get started, prepare your shrimp and season them with salt and pepper. Get out a large skillet or saucepan and set it over medium-high heat. Add a tablespoon of olive oil once the pan is hot and add your shrimp in in a single flat layer. Cook it for three minutes, turning it over one time halfway through this process. Wait until the shrimp are just cooked through before taking them out of the pan.

2. Next, throw your shrimp on a cutting board and roughly chop them all up, throwing them into a mixing bowl. If you haven’t already, juice your three limes and add that juice to the shrimp bowl, stirring everything up and setting it aside to marinate.

3. In the meantime, dice up your cucumber, avocado and cucumber before adding them to the shrimp bowl as well. Give the entire thing another stir so that it’s evenly combined.

4. After that, peel and dice up your onion and chop your fresh cilantro. With everything ready, throw all the ingredients together in your mixing bowl and give it one more stir. At the end, you’re ready to eat! Serve it with a side bowl of tortilla chips and enjoy.

Though salsa and guacamole are great go-to’s for warm tortilla chips, this dip is something else altogether. Though it still has the avocado and lime flavor that you love from guacamole, the shrimp taste adds a new layer that you and your friends are sure to love. When you make this with fresh ingredients, the flavor is truly unbeatable!

As always, there’s room to experiment with this dish after you’ve tried it a few times. If you want to use lemon juice instead of lime, feel free!
