Fortunately, what we have for you today is a delicious recipe that puts a twist on this classic by inserting a fruit alternative. Though it only uses two ingredients, this dish will have you reminded of that once-popular song sung by Jack Johnson and you’ll understand the appeal… get it? Peel? That’s right, today we’re making banana pancakes and the recipe couldn’t be simpler. So let’s get started.

Here’s what you’ll need:

  • 2 eggs
  • 1 banana
  • coconut oil (extra virgin olive oil is also an option)

Here’s what you do:

1. To get started, get out a decent sized mixing bowl and combine your banana and your eggs. Get a fork and mash the two together, lightly beating the mixture once the banana is broken down enough and the ingredients are incorporated.

2. Amazingly enough, this is all it takes—your pancake batter is ready! Get a skillet going over medium-high heat and drop in some coconut oil. Drip your batter in to make pancakes of whatever size your heart desires. When you can start to see bubbles rising up through the dough, flip to the other side.

3. Once you’ve cooked all your pancakes, top them with butter and serve with syrup!

As you can see, this recipe truly is one of the simplest breakfast recipes out there. The beautiful thing about it is that the bananas themselves contain many of the normal “ingredients” you would add to a pancake recipe as extras! Their flavor works well with the eggs already and the natural sugar breaks down in the pan to create a caramelized and delicious treat for you and your family.

While this simple recipe above is a great starting point, these pancakes can be made even better by experimenting with spices and add-ins. For one thing, throwing in a little bit of cinnamon and nutmeg can give the flavor an extra kick—some vanilla extract would work well also.
