Pot roast is traditionally a braised beef meal that typically takes like four and a half hours to cook in the oven. Those who like the dish are familiar with how rich the flavor turns out, in no small part because the meat has plenty of time to absorb the flavors of the vegetables around it. Still, there’s an easy way to make a dish similar to a pot roast that takes less effort and can be put together more easily.

If you haven’t guessed yet, it does involve a slow cooker! This recipe is for a simple steak soup with the same flavor profile as a delicious pot roast. Though it takes a little longer to cook, you can turn it on and put it out of your mind.

Here’s what you need:

  • 2 pounds of one-inch cubed sirloin tip steak
  • 1/4 cup of flour
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground pepper
  • 1 packet of dry onion soup mix
  • 2 quarts of beef broth
  • 2 tablespoons of tomato paste
  • 1 tablespoon of Worcestershire sauce
  • 2 cups of cooked ditalini pasta

Here’s what you do:

1. To begin, toss your cubed steak together with flour, salt and pepper in your slow cooker until its completely covered on all sides. Make sure your pieces are evenly coated!

2. Next, add in your soup mix along with the beef broth, tomato paste and Worcestershire sauce as well. Once it’s all in there, cover it and let it cook on low for eight hours.

3. Once enough time has passed, take the lid off the slow cooker and drop in your noodles. Cook it all for another 15 to 20 minutes until the noodles are hot and soft enough to eat. Once it’s already, serve it hot for best results!

While this recipe has a more traditional seasoning style, there are other ways to tweak this steak soup to make it your own. For a simple Tex-Mex variation on this, throw in a packet of taco seasoning instead of the onion soup mix to give it a little extra kick. To change things up even more, feel free to throw in other veggies as well—maybe some standard onions or some green onions at the end to take things up a notch. No matter what you do, you can’t go wrong with this soup!
