This Strawberry Banana Bread Is A Fun Twist On A Classic

Do you love bananas? Although we all have our own preferences when it comes to fruit, it’s hard to deny that a ripe banana is one of nature’s most precious and unique flavors. Although they work well as a quick snack or a breakfast for a businessperson on-the-go, they also work very well when added into a variety of different baked recipes. While a mashed banana can even serve as an egg substitute or a pancake base in certain situations, the recipe they’re perhaps most famous for is the classic loaf of banana bread.

But what if we told you that we found a way to make a normal loaf of banana bread even better? Today, we’re going to let you in on a secret recipe that is so obvious that we wish we’d thought of it sooner. That’s right, we’re making strawberry banana bread which gives this classic dish an additional burst of fruity flavor. Strawberries and bananas already go together so well in other places—particularly in smoothies—so it was only a matter of time before somebody thought to combine them in another arena as well. Trust us, this one is a keeper. Are you ready? Let’s go.

Here’s what you’ll need:

  • 1/2 cup of softened butter
  • 1 cup of granulated sugar
  • 2 large eggs, beaten
  • 3 ripe bananas, mashed
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 1/2 cups of fresh strawberries (chopped and tossed in flour)

Here’s what you do:

1. Before anything else, get your oven preheated to 375 degrees and spray down a standard 9×5-inch loaf pan with some non-stick spray. Set those aside and get out a large mixing bowl—ideally, you’ll want a stand mixer with a paddle attachment for this! Pour in your butter and sugar and cream them together until they’re light and fluffy.

2. In another small bowl, add your eggs and beat them together with a fork. Keep the mixer going and add in your eggs until they’re well-combined with everything else. Finally, add in your mashed bananas and keep mixing it all up.

3. On the side, sift your flour, baking soda and salt and mix them together. Once they’re combined, gradually add these dry ingredients into the wet mixture until it’s all just combined—be careful not to over-mix at this stage! If you haven’t already done so, chop up your strawberries and toss them in a tablespoon of flour. Fold those into the mix as well.

4. When the batter is done, pour it into your loaf pans and pop them in the oven for 15 minutes. When that time has passed, reduce the heat to 350 degrees and bake them for another 30 minutes. Check that the edges are slightly brown and do the toothpick test after the time is up to make sure everything looks good. Let it cool off before slicing off a piece!

Although this recipe isn’t terribly different from a classic banana bread recipe, the addition of the strawberries really adds an entirely new dimension to it.
