Carrot cake is undoubtedly a favorite of many. We are indeed grateful for this healthier alternative for a snack that Charlotte will be teaching us.

She said that she spent the quarantine days perfecting this carrot cake slice recipe, and she’s been loving the recipe herself. In fact, she has cooked this quite a few times.

You need to prepare two bowls for the wet ingredients and dry ingredients.

For the wet ingredients, you will need:

  • 1 egg
  • 70 ml egg whites (carton of)
  • 50 g yoPRO yogurt
  • 50 ml sugar-free maple syrup

For the dry ingredients, prepare the following:

  • 40 g protein powder
  • 60 g coconut flour
  • Cinnamon
  • 150 g shredded carrots

To cook this delicious carrot cake slice recipe, follow these instructions:

1. Preheat your oven to 160 degrees Celsius.

2. Grate the carrots

You need to grate the carrot or cut them into small sizes. This is an essential ingredient that you will need for the base.

3. Prepare the wet ingredients

In a bowl, mix the egg, egg whites, and sugar-free maple syrup to make the wet mixture.

4. Grab another bowl for mixing the dry ingredients

Put the protein powder, coconut flour, cinnamon, a little stevia, and yoPRO yogurt.

5. Mix the wet ingredients with the dry ingredients

Mix the mixtures carefully and add the grated carrots. To help the mixture rise a little bit, just add a sprinkle of baking powder. If you see that the mixture is very dry, just pour a tad of almond milk.

6. Put the mixture in the baking tray

Line the baking tray with baking paper and put the mixture in it. Then bake this for about 30 minutes in the oven but occasionally check it when 25 minutes have passed.

7. Prepare the icing

To make the icing, simply mix 150g of yoPro yogurt, 30 grams of light smooth ricotta,10g honey, and cinnamon if you like.

Place this icing mixture in the fridge while waiting for the carrot cake to finish baking in the oven.

8. Spread the icing on the carrot cake

When the carrot cake’s done, you can then spread the icing on top, before you slice it into 20 small pieces.

Get a slice of this cake and eat it with your tea. You can avoid feeling guilty for eating 2 pieces of this a day since this only comes with 37 calories apiece.
