Aside from vegan meatballs, which are also delicious, you can add vegetables to your favorite meatballs.

A new take on an old classic

Adding vegetables to meatballs will give them added flavor and a different texture that you will surely enjoy.

Galina, the owner of the YouTube Channel Lecker schnell, posted a recipe for Vegetable Meatballs in tomato and sour cream sauce.

For the meat and veggie balls:

  • 1 onion
  • 1 carrot (grated)
  • 2 tablespoons of cooking oil
  • 1/2 cabbage (medium)
  • Salt

  • 600 grams of minced meat
  • Black pepper
  • Coriander
  • 2 cloves of garlic

For the sauce:

  • 2 tablespoons of cooking oil
  • 1 onion
  • 1 carrot (grated)
  • 2 tomatoes (grated)

  • Salt
  • Black pepper
  • 1 teaspoon sugar
  • 6 tablespoons sour cream

The steps:

Step 1. First. Let’s prepare the vegetable meatballs. Cut your onions and grate your carrot. Thinly slice your 1/2 cabbage and then prepare to cook.

Step 2. Heat your pan and add your cooking oil. Sauté your onion and carrots and when your onions turn translucent, add your cabbage.

Simmer in low heat for 15 minutes. Season with salt and mix well. Place in a bowl once cooked.

Step 3. Add your meat and season with salt, pepper, coriander, and minced garlic. Mix well and then start making oval-shaped meatballs. Set them aside.

Step 4. Fry your meatballs until they turn golden brown in color on each side. Set them aside.

Step 5. It’s time for the sauce. Chop your onion, grate your carrot and sauté them. While cooking, you can start grating your tomatoes.

Step 6. Pour in the grated tomatoes on your pan with the onion and carrots. Simmer until cooked.

Step 7. Add salt, pepper, and sugar. Once you see that your sauce is cooked, you can add the 6 tablespoons of sour cream. Cook until thick. Looks yummy, right?

Step 8. Grease your casserole with oil and place your vegetable meatballs. Spread the sauce on top and bake at 190°C for 35 minutes.

Step 9. Top with chopped parsley. Enjoy.

The dense, flavorful veggie meatballs are filling but you’ll still crave more. The sauce is just right; it blends well with the meatballs.

You can also prepare side dishes along with this meal. Steamed broccoli, beans, or even slices of garlic bread would be nice.
