What dish would be perfect for a weekend night or holiday?

Now, the recipe that we found is called Cheesy Loaded Baked Potato Casserole, and just by its name you know it’s good.

In fact, we don’t even think you have to wait for the weekend or a holiday to create this. It looks so good that you might even crave it as your midnight snack.

Fluffy potatoes, crispy bacon, savory cheese, and onions – what could go wrong with this dish?

Matt Price, popularly known as Mr. Make It Happen, is a YouTube superstar because of his mouthwatering recipes.

Last April, he uploaded the recipe for Cheesy Loaded Baked Potato Casserole, and many fell in love with it.

Here’s what you will need:

  • 4 medium russet potatoes
  • 6-7 strips of thick-cut bacon
  • 1 cup white cheddar
  • 1 cup yellow cheddar

  • 1/2 Boursin garlic and herbs cheese
  • 3 green onions
  • 1/2 diced yellow onion
  • 4 oz. cream cheese
  • 1 tablespoon of minced garlic

  • 3 tablespoons of butter
  • 1 cup whole milk
  • Salt and pepper to taste
  • Garlic powder
  • Onion powder

Let’s make this delicious comfort dish.

Step 1. Clean, peel, and cut your potatoes into smaller pieces. Wash thoroughly.

Step 2. Place the clean potatoes in a pot and add salt. Let it boil until soft or fork tender.

Step 3. Cook your bacon in the oven until crispy. Don’t forget to line your baking tray with aluminum foil to avoid all the excess oil drip.

Step 4. While your potatoes and bacon are cooking, get your 1 cup white cheddar and 1 cup yellow cheddar, grate them, and set them aside.

Step 5. Chop your leeks or green onion and leave some of the green stalks for garnishing. Once done, dice your onion and place a pan on the stove.

Step 6. Use some of the bacon fat in your pan, then saute your onion leeks, and add some minced garlic and seasonings. Cook until onions are translucent.

Step 7. Get your bacon and chop them. Set aside two tablespoons of bacon for garnishing. (Try not to eat the bacon.)

Step 8. Mash your potatoes and mix in your cream cheese, sauteed onions, Boursin garlic and herbs cheese, butter, milk, white and yellow cheeses, bacon bits, and other seasonings.

Step 9. Fold them all together until you have a mash-potato-like dish. Place it in a casserole dish (he used 9×11) and top with cheese again.

Step 10. Preheat the oven to 375 degrees and bake for around 20 mins or more, depending on your oven settings.

Step 11. Once done, garnish with green onions and bacon bits. Serve warm. Enjoy!
