Breakfast? Brunch? Light lunch or dinner? This omelet is scrumptious and so versatile you will be surprised at how delicious it is no matter what time of the day it is.

Even if you’re not a great cook, you can definitely make this bad boy and enjoy it with your significant other, your family, or just by yourself because… why not?

At first sight, it looks like it’s an ordinary omelet. Eggs, veggies, maybe some potatoes to make it more special, and that’s it.

Now, look at this omelet. Does it look like one of those omelets that you’ve eaten countless times in your life already? Well, let us assure you that this omelet is hiding a secret in its “heart”; one that will melt yours!

All you need to do is chop your veggies and dice your potatoes. Then beat your eggs, pour them in the veggie mixture and whisk well until well incorporated.

In a pan, fry your potatoes and add them to the mixture. Pour some of the final mixture in a pan with some oil, and then place in the middle of it. Add the remaining mixture and cook until set.

Your omelet is ready to enjoy in the morning, at noon or in the evening. It’s a great dish that everyone can cook successfully and it is a great idea if you have almost nothing left in your fridge and want a quick bite.

Ingredients:

  • 10 eggs
  • salt & pepper
  • fresh chopped parsley
  • oil for frying
  • 1⅓ lb potatoes
  • 2 small onions
  • 1 wheel of soft cheese

Directions:

Chop the parsley and onions and dice the potatoes.

Beat the eggs in a big bowl and add the parsley, salt, and pepper.

In a pan, fry the diced potatoes in some oil, until they are crispy and have developed a golden brown color.

Add the potatoes and onions in the egg mixture.

In a pan, heat some oil and pour 1/3 of the egg and potato mixture in it. Cook until it is set, and then place che cheese in the middle of the pan.

Cover the wheel of cheese with the remaining mixture and continue cooking over medium heat, until it’s solid. Then, turn the omelet upside down and cook until it’s golden brown.

Remove from the pan and put in a serving plate.

Serve and get ready to surprise your guests with the melting heart of this omelet.
